Yesterday was Taco Tuesday in our house!!  So, we did it right!  Remember all the way back to last week when I gave you the recipe for super simple sloppy joes?  I mentioned right up at the beginning of that recipe that I like to cook extra ground beef for future recipes.  That simple tip made last night’s meal prep time practically nonexistent.  You won’t hear me complain about that!

This recipe was a bit of an experiment for me.  I have made a version of this before in the oven, and since cooking in the crock pot (we have this one) is a bit different, I had to tweak it a bit.

dorito taco casserole

this taco casserole with nacho chips is a favorite in our house, and since it's made in the crock pot, it is insanely easy to make!

ingredients

  • 1-1.5 pounds of ground beef (browned)
  • 1- 2 cups crushed tortilla chips
  • 1- 2 cups crushed doritoes
  • 1 cup salsa
  • 1 cup mayonnaise
  • 2 cups finely shredded mexican blend cheese
  • 1 package taco seasoning

Combine beef, salsa, mayonnaise, and taco seasoning into a bowl.  Stir together until well blended.  Add cheese.  Stir well.  When I make this recipe in the oven, I layer the cheese with the beef mixture.  In the crock pot, this step is important to keep the cheese creamy and keep it from getting hard, throughout the day.

Pour half of the beef and cheese mixture into the bottom of the crock pot. Spread the tortilla chips on the beef layer.  Add another layer of the beef.  Put the doritos aside for later.  Cook on low 4-6 hours.  30 minutes before serving, add a layer of Doritos.
