easy crock pot pulled pork

I can’t believe we are nearing the end of this little challenge to make dinner in the crock pot every weekday for 4 weeks!!  I hope you have found a recipe or two that has helped make your busy days a little more manageable, and a bit tastier than fast food!!!  I have made pulled pork once or twice, but I am a bit clueless about meats other than chicken, so I was lucky when I ran into the butcher at the grocery store who pointed me in the right direction regarding which type of pork to buy! I have been buying the wrong cut!!scripture-prints

ingredients

  • 2-3 pounds pork shoulder roast with the fat trimmed off
  • 1 can of dr pepper
  • pork rub
  • 1 bottle of barbecue sauce

Cut the meat in half.  Cover both pieces in pork rub.  Set the meat in the crock pot and pour the Dr Pepper over it.  Cook on high 4-6 hours or low 6-8 hours.  About 30 minutes before serving, remove the bone, and shred the pork.  It should literally fall apart.  Add the barbecue sauce, and stir. Continue cooking until the sauce is warm.  I considered draining a bit of the liquid before adding the barbecue sauce.  I’m so glad i didn’t.  The sauce was not thick but it left everything nice and juicy!!
