i’m barely squeaking this post in because i am running out of time today, so no pointless chatter before the recipe… except to say, this was a total treat for my family, since i make a lot of chicken meals. also, i did search the internet for a recipe, but ended up coming up with my own idea, and i am so glad i decided to get a little creative because it was so worth it!!
crock pot roast
ingredients
2-3 pound pot roast
3 cups baby carrots
3 cups baby yellow potatoes, cleaned
1 medium yellow onion cut into large chunks
3 cups of beef broth
2 packets italian dressing seasoning
place thawed roast in the bottom of the crock pot, add potatoes, carrots, and onion around and over the roast. sprinkle both packets of italian dressing seasoning over the meat and veggies. pour beef broth over everything, making sure the beef is completely submerged. cook on high for 6 hours. this recipe definitely required the high temperature and a minimum of 6 hours.
once everything was done, i separated the broth and made homemade gravy…totally worth the extra time!! 🙂
