welcome back, everyone! i’ve made it to day 4 of my crock pot series, and i really do hope this is benefiting you all as much as it is me! last week, i actually made it to all of the kids’ activities, kind of on time, and everyone had full bellies!! score! in case you missed them, i’ve posted recipes for hearty chicken chili, super simple sloppy joes, and homemade crock pot spaghetti sauce. today’s recipe requires a little more work, but still not much, and i will give you a little trick to make it ultra simple. i’ve found that if a recipe doesn’t have a quick fix, i will start with good intentions at the grocery store, and then never follow through. chicken pot pie (in the oven) is one of my favorite fall/ winter meals though, and making it in the crock pot, even with the extra steps, makes it so much easier than the oven, i don’t mind a little extra work! plus, there is no making sides or veggies for this recipe. the only extra thing i make is rolls, since there is no pie crust as in a traditional pot pie.

creamy chicken pot pie
ingredients
2 large boneless, skinless chicken breasts (3 medium)- once again, i add mine to the crock pot only thawed enough to trim the fat
5 red potatoes cubed
1-2 cups of baby carrots
1 small bag of corn or peas (i used corn this time)
1/2 small onion chopped (optional)
1/2 cup of celery diced
1 cup chicken broth
ingredients for the gravy
1/2 cup of magarine or butter
1/2 cup of flour
2/3 cup of milk
2 cups of chicken broth
throw all of the ingredients into the crock pot except for the gravy ingredients. cook on low 6-8 hours, or high 4-6 hours. (note: if you choose to place your chicken into the crock pot frozen, you may need to use the high setting even if you plan to keep it on for longer. my crock pot typically cooks chicken on high in about 6 hours).
about 30 minutes before dinner, you will need to make your gravy. in a medium saucepan, melt the butter. add the flour, whisking constantly until it is bubbly. slowly, add the milk, continuously stirring, until the sauce thickens. lastly, slowly add the remaining chicken broth. continue stirring until the gravy thickens.
at this point, i like to drain some of the chicken broth in the crock pot before adding the gravy. if you want this meal with a thick, creamy gravy, i would definitely drain some of the liquid in the crock pot. that’s a personal choice though. once i have done that, i add the gravy, give it a good stir, and i’m ready to serve!!
if you want to make this recipe easier than it already is, just get yourself 2 jars of premade chicken gravy, and skip the whole making gravy step!!
