As you probably guessed from my blog name, I love parties. It all started when I worked for my stepmother, who owned a successful catering company for over 20 years. She was a master at creating dishes that are incredibly easy and delicious.
I’ll never forget one of her signature appetizers: caramelized onions on crostini.
They were a hit at every single party, and were regularly requested by clients. And when you’re working with a large staff to put food out in real time, appetizers like those are easy.
But trying to make something like that at home can quickly become too stressful.
You see, crostini (or dried bread slices) are time consuming to prepare, and will get soggy if left out too long. And no hostess wants to deal with preparing an appetizer like that during a busy holiday celebration.
Enter the caramelized onion galette.
Seriously, this caramelized onion galette is the perfect balance of freshly made and make-ahead. All the hard work can be done a day or two in advance, so all you have to do on the big day is assemble and bake!
And you know how perfect it is to walk into a house to the smell of freshly baked goods. Yum.
Start by caramelizing the onions a day or two in advance and then store them in an airtight container in the refrigerator. Then, on the big day, simply unroll your refrigerated pie dough, add the prepared onions and a little cheese, and then bake until golden.
When the caramelized onion galette is finished baking, slice it with a pizza cutter into triangles or squares and you have the easiest appetizer ever. It’s the perfect appetizer for today’s busy hostess!
Just don’t tell your guests how easy it was to prepare!
Caramelized Onion Galette
Ingredients
- 4 Tbsp unsalted butter
- 3 lbs sweet onions, thinly sliced
- 1 clove garlic, ground into a paste
- ¼ tsp. Freshly ground pepper
- Kosher salt
- 1½ tbsp. Dijon mustard (preferably country dijon)
- 1 tsp sherry vinegar
- refrigerated pie crust
- 1 c. shredded Parmesan
- 1 large Egg
- 1 tsp water
Directions
- Preheat oven to 400 degrees F. Prepare a sheet pan with parchment paper.
- Heat a large skillet over low heat. Add butter and heat until melted.
- Add sliced onions and carefully toss to coat. Cook for 5 minutes and add garlic.
- Cook, stirring regularly until onions are soft, golden brown, and have reduced to the consistency of a stringy paste. Add in sherry vinegar and dijon mustard.
- Unroll the pie crust on the prepared pan and sprinkle with 1/3 cup shredded parmesan cheese.
- Spoon onions into the center of the pie crust. Using the back of a spoon, spread onions to approximately 2-inches away from the edge of the dough.
- Fold the edges of the dough over the filling to create a crust, pleating as necessary.
- Crack the egg into a small bowl with water and lightly whisk with a fork. Brush egg wash over the pie crust edge.
- Bake galette on the bottom rack of the oven until the crust just starts to turn golden brown, approximately 10 to 15 minutes.
- Sprinkle with remaining parmesan cheese, and bake an additional 10 to 15 minutes until the crust edges are turning into a deeper shade of golden brown.
Tips for Making an Amazing Caramelized Onion Galette
- A large pan with high sides is necessary for caramelizing the onions. While the onions cook down to a small quantity, they take require quite a bit of room when they are raw. You may want to use a dutch oven, if you don’t have a skillet or pan big enough for all the raw onions.
- The longer you cook the onions, the sweeter they will get. You can probably stop cooking them after about 30 minutes, but I cooked ours for a full 45 minutes to ensure they were fully caramelized.
- This recipe is very rich, so thin slices are all that’s necessary.
- Great wine pairings include a crisp Reisling or a light Pinot Noir. If your guests prefer beer, you might want to offer a bright IPA.
